Sur le Fil - AOP Ventoux Rouge - La Ferme Saint-Martin

Philosophy

This cuvée is the refined and very digestible expression of a high-altitude gravel terroir.
It is a very clear red wine with very little tannin. A aperitif wine, a festive wine, very gulpy but with a long and expressive finish.

Terroir

High-altitude gravel on the foothills of Mont Ventoux.
Partly deep and fertile soils, very calcareous.

In the vineyard

Vines cultivated using certified organic farming methods since 2012.
Thoughtful tillage between the rows.
“Something incomprehensible” from the grass under the feet.

In the cellar

Creating a digestible dynamic that whets the thirst. Vinification without any added winemaking products. Harvested and sorted manually, transported in 350kg bins. 50% Grenache – 10% Syrah – 40% Cinsault.

Part of the grapes are carbonic maceration in cold vats to preserve the fruit.
A small part is directly pressed for ease of digestion.
Part of the grapes are short traditional maceration on the finest terroirs to preserve this unique character.
Without sulfur.

Tasting

Very light color that may surprise.
The nose is elegant with aromas of small forest fruits. The palate is supple and fresh. Thanks to its light tannic structure and a very rich mid-palate, this is a wine that calls for another sip. The finish is long and persistent, still with notes of small red fruits.

Ageing

A spring wine to drink immediately. Aging potential of 3 to 4 years in a cool cellar.
