History

Les Estaillades are vineyard plots acquired in 1999, which we particularly appreciate. They are nestled in a valley sheltered from the Mistral wind, in the commune of Le Barroux, surrounded by Aleppo pines and scrubland. In 2010, small former plots of apricot trees were added to this plot, where we replanted Counoises and Cinsault.

Terroir

Clay-sandy soil from the Triassic period, very sunny, facing southwest. The soil is mechanically worked between the vines, and a vegetation cover is maintained between the rows. Largely Grenache, vines 20 to 45 years old. Yield: 35 to 40 hl/h.

In the cellar

Vinished without any added oenological product. Hand-harvested, hand-sorted, completely destemmed. Maceration 14 to 21 days, aging 7 months in concrete vats. Sulfur-free.

Tasting

Very dark ruby ​​color, powerful nose of red fruits and kirsch. On the palate, beautiful body, dense, slightly licorice and minty. Finish with silky, lingering tannins.

Storage

Can be consumed young, with a aging potential of 3 to 7 years in a cool cellar (2 to 4 in a cellar with significant temperature variations).
